Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric (optional, for color and flavor)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 1/2 cups dried lentils (green or brown, rinsed and drained)
  • 6 cups vegetable broth (or chicken broth for a non-vegan version)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional, for added greens)
  • 1 tablespoon lemon juice (optional, for a bright finish)

Instructions

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened.
    • Add the minced garlic, cumin, turmeric (if using), and dried thyme. Cook for another 1-2 minutes, stirring occasionally, until the garlic becomes fragrant.
  2. Add the Lentils and Liquid:
    • Stir in the rinsed lentils, vegetable broth, diced tomatoes (with juice), and bay leaf. Bring the mixture to a boil over high heat.
    • Once boiling, reduce the heat to low and let the soup simmer for 25-30 minutes, or until the lentils are tender. If the soup gets too thick, you can add extra broth or water to reach your desired consistency.
  3. Season and Finish:
    • Remove the bay leaf and season the soup with salt and pepper to taste.
    • If you’d like to add greens, stir in the spinach or kale and cook for an additional 5-7 minutes, until the greens are wilted.
    • For a bright flavor, add a tablespoon of lemon juice before serving.
  4. Serve:
    • Ladle the soup into bowls and serve hot. It’s perfect with crusty bread or a side salad.

  • Add Protein: For a more substantial soup, add cooked chicken, sausage, or tofu.
