Ingredients

For the Skagen Salad:

  • 1 lb (450 g) cooked shrimp, peeled and deveined (small to medium-sized shrimp are best)
  • 1/2 cup mayonnaise (preferably Swedish, or use a high-quality mayo)
  • 2 tablespoons crème fraîche or sour cream (for extra creaminess)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (optional, for extra zest)
  • 2 tablespoons fresh dill, chopped (plus extra for garnish)
  • 1 small red onion, finely chopped
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

For Serving:

  • 4 slices of rye bread or toasted white bread (traditionally served on rye)
  • Lettuce leaves (optional, for serving)

Instructions

  1. Prepare the Shrimp:
    • If the shrimp are not pre-cooked, quickly boil them in salted water for 1-2 minutes until pink and opaque, then drain and chill. Pat them dry with a paper towel.
    • Chop the shrimp into bite-sized pieces (if using larger shrimp) and set aside.
  2. Make the Skagen Salad Mixture:
    • In a large mixing bowl, combine the mayonnaise, crème fraîche (or sour cream), Dijon mustard, lemon juice, lemon zest (if using), and fresh dill. Stir until smooth and well combined.
    • Add the chopped red onion and season with salt and pepper to taste. Mix gently to combine all ingredients.
  3. Add the Shrimp:
    • Fold the chopped shrimp into the creamy mixture, being careful not to mash the shrimp. Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.
  4. Serve:
    • Place the Skagen Salad on top of the toasted rye bread or white bread slices. You can also serve the salad in individual bowls or as a canapé on small pieces of toast.
    • Garnish with extra fresh dill, a sprig of parsley, and a lemon wedge on the side for added color and flavor.
  5. Enjoy:
    • Serve immediately as a starter or light lunch, or refrigerate for 30 minutes for the flavors to meld before serving.
