Shrimp Alfredo

Succulent shrimp embraced by perfectly cooked pasta, bathed in a velvety, light alfredo sauce. It’s the pinnacle of culinary bliss. This recipe takes the classic alfredo sauce, often deemed heavy, and transforms it into a lighter version without compromising flavor.

Ingredients You’ll Need:

For the Shrimp Pasta:

  • 1 pound of shrimp, peeled and deveined
  • 12 ounces of pasta (linguine or fettuccine work well)
  • 2 tablespoons olive oil
  • Salt and black pepper to season

For the Light Alfredo Sauce:

  • 2 tablespoons unsalted butter
  • 3 cloves of garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup low-fat milk or unsweetened almond milk
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon all-purpose flour or cornstarch
  • Fresh parsley for garnish

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serves: 4

Let’s Create Culinary Magic:

  1. Prepare the Pasta: Cook your pasta according to the package instructions in a pot of boiling water. Once it’s perfectly al dente, drain it, and set it aside.
  2. Sauté the Shrimp: While the pasta is cooking, heat olive oil in a skillet over medium-high heat. Season the peeled and deveined shrimp with salt and pepper. Sauté the shrimp until they turn pink and slightly curled, indicating they’re perfectly cooked. Remove the shrimp from the skillet and set them aside.
  3. Craft the Light Alfredo Sauce: In the same skillet, melt the butter over medium heat. Sauté the minced garlic until fragrant. Add in the flour or cornstarch, stirring until it forms a smooth paste. Gradually pour in the broth and milk, whisking continuously to avoid lumps. Let the mixture thicken and gently bubble. Once it reaches a delightful consistency, sprinkle in the grated Parmesan cheese. Stir until the cheese melts and blends, creating a velvety, delightful sauce.
  4. Combine and Toss: Add the cooked pasta into the pot of luscious alfredo sauce. Ensure the pasta is well coated in this creamy goodness. Gently reintroduce the sautéed shrimp to the mix, giving everything a final toss to allow the flavors to mingle.
  5. Garnish and Serve: Sprinkle your creation with freshly chopped parsley for a touch of vibrancy and freshness. Your dish is now a feast for the eyes and the taste buds.

Serve this delightful dish to eagerly awaiting guests or enjoy this culinary adventure yourself. It’s a light, flavorful indulgence that promises satisfaction without the guilt.
