Christmas Sugar Cookies with Royal Icing

Ingredients
For the Sugar Cookies:
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional, for added flavor)
- 1/4 teaspoon salt
For the Royal Icing:
- 3 large egg whites (or use pasteurized egg whites)
- 4 cups powdered sugar, sifted
- 1 teaspoon lemon juice
- Food coloring (optional)
- Sprinkles or edible glitter for decoration (optional)
Instructions
- Make the Sugar Cookie Dough:
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the egg, vanilla extract, and almond extract (if using), and continue mixing until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If the dough is too soft, refrigerate for 30 minutes to make it easier to roll out.
- Chill and Roll Out the Dough:
- Divide the dough into two portions and wrap each in plastic wrap. Refrigerate for at least 30 minutes (or up to 2 days) to firm up.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.

- Decorate the Cookies:
- Once the cookies are completely cooled, use a piping bag or a small spoon to outline the edges of each cookie with royal icing.
- Once the outline has set (usually 15-20 minutes), flood the centers with a thinner consistency of royal icing. You can gently spread the icing with a toothpick to cover the surface.
- Add additional decorations, such as sprinkles, edible glitter, or more piping for details.
- Allow the icing to dry completely before storing or packaging.
- Serve and Enjoy:
- Let the decorated cookies sit out at room temperature for at least an hour to fully set. Store in an airtight container for up to a week, or freeze for longer storage.
