  • 12 oz (340g) tagliatelle pasta
  • 1/2 cup sun-dried tomatoes in olive oil, drained and chopped
  • 2 tablespoons olive oil (from the sun-dried tomato jar)
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup vegetable or chicken broth (or pasta water)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup Parmesan cheese, grated (optional for non-vegan version)
  • Salt and pepper to taste
  • Lemon zest (optional, for garnish)

Instructions

  1. Cook the Tagliatelle:
    • Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. Sauté the Garlic and Sun-Dried Tomatoes:
    • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
    • Add the chopped sun-dried tomatoes and cook for another 2-3 minutes, stirring occasionally.
  3. Create the Sauce:
    • Pour in the vegetable or chicken broth (or reserved pasta water) to deglaze the pan, scraping up any bits from the bottom. Simmer for 3-4 minutes, allowing the flavors to meld.
  4. Combine the Pasta and Sauce:
    • Add the cooked tagliatelle to the skillet and toss to coat the pasta evenly in the sauce. If the pasta seems too dry, add a little of the reserved pasta water until you reach your desired consistency.
  5. Finish and Serve:
    • Stir in the fresh basil and season with salt and pepper to taste.
    • Serve hot, topped with grated Parmesan cheese (if using) and a sprinkle of lemon zest for a bright finish.
