Ingredients
- 12 oz (340g) tagliatelle pasta
- 1/2 cup sun-dried tomatoes in olive oil, drained and chopped
- 2 tablespoons olive oil (from the sun-dried tomato jar)
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 1/2 cup vegetable or chicken broth (or pasta water)
- 1/4 cup fresh basil, chopped
- 1/4 cup Parmesan cheese, grated (optional for non-vegan version)
- Salt and pepper to taste
- Lemon zest (optional, for garnish)
Instructions
- Cook the Tagliatelle:
- Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- Sauté the Garlic and Sun-Dried Tomatoes:
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the chopped sun-dried tomatoes and cook for another 2-3 minutes, stirring occasionally.
- Create the Sauce:
- Pour in the vegetable or chicken broth (or reserved pasta water) to deglaze the pan, scraping up any bits from the bottom. Simmer for 3-4 minutes, allowing the flavors to meld.
- Combine the Pasta and Sauce:
- Add the cooked tagliatelle to the skillet and toss to coat the pasta evenly in the sauce. If the pasta seems too dry, add a little of the reserved pasta water until you reach your desired consistency.
- Finish and Serve:
- Stir in the fresh basil and season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese (if using) and a sprinkle of lemon zest for a bright finish.
Tips and Variations
- Add Veggies: Include sautéed spinach, mushrooms, or cherry tomatoes for extra flavor and nutrition.
- Vegan Option: Omit the Parmesan cheese or substitute with nutritional yeast for a vegan-friendly version.
- Protein Boost: Add grilled chicken, shrimp, or tofu for a heartier meal.
