Korean Beef Bowls

Korean Beef Bowls are a delicious and easy weeknight meal that combines savory, sweet, and slightly spicy flavors. Ground beef is cooked with garlic, ginger, and a soy-based sauce, then served over rice and topped with fresh veggies for a complete and satisfying meal. It’s a perfect blend of comforting and bold flavors that comes together in under 30 minutes!

Ingredients

For the Beef:

  • 1 pound ground beef (preferably lean)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili paste or sriracha (optional, for heat)
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

For the Bowls:

  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1/2 cup green onions, sliced
  • 2 tablespoons sesame seeds
  • Fresh cilantro or parsley, chopped (optional, for garnish)

Instructions

  1. Cook the Ground Beef: In a large skillet, heat the sesame oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through. Drain any excess fat if needed.
  2. Add Aromatics: Add the minced garlic and grated ginger to the skillet. Cook for 1-2 minutes until fragrant.
  3. Make the Sauce: In a small bowl, whisk together the soy sauce, brown sugar (or honey), rice vinegar, and chili paste (if using). Pour the sauce over the cooked beef and stir to combine.
  4. Thicken the Sauce (Optional): If you prefer a thicker sauce, stir in the cornstarch mixed with water and cook for an additional 1-2 minutes until the sauce has thickened.
  5. Assemble the Bowls: Divide the cooked rice among four bowls. Top each with a generous portion of the Korean beef.
  6. Add Fresh Veggies: Add shredded carrots, cucumber slices, and green onions on top of the beef.
  7. Garnish and Serve: Sprinkle each bowl with sesame seeds and chopped cilantro or parsley if desired. Serve immediately and enjoy!

Tips and Variations

  • Veggie Boost: Add sautéed spinach, steamed broccoli, or snap peas for extra veggies.
  • Protein Swap: Substitute ground turkey, chicken, or even tofu for a different protein option.
  • Make it Low-Carb: Swap the rice for cauliflower rice or serve the beef over a bed of mixed greens.
  • Spice Level: Adjust the heat by adding more or less chili paste or sriracha based on your preference.

These Korean Beef Bowls are versatile and easily customizable, making them a go-to for busy nights or meal prep. Enjoy the bold flavors and simplicity of this delicious dish!
