Ingredients
- 2 cups cucumber, diced (peeled and seeded if desired)
- 1 cup cherry tomatoes, quartered (or 2 medium tomatoes, diced)
- 1 yellow bell pepper, diced
- 1/4 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño pepper, seeded and finely diced (optional, for a bit of heat)
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Prepare the Vegetables: Dice the cucumber, tomatoes, and yellow bell pepper into small, bite-sized pieces. Finely dice the red onion and jalapeño if using.
- Combine Ingredients: In a large bowl, combine the diced cucumber, tomatoes, yellow bell pepper, red onion, and jalapeño (if using). Add the chopped cilantro.
- Season and Mix: Add the minced garlic, lime juice, and olive oil to the bowl. Season with salt and pepper to taste.
- Toss and Chill: Gently toss the ingredients until well combined. Cover and refrigerate for at least 15 minutes to allow the flavors to meld together.
- Serve: Serve the cucumber salsa chilled with tortilla chips, as a topping for tacos, or as a fresh side for grilled meats and seafood.
Tips and Variations
- Add Avocado: For extra creaminess, add diced avocado just before serving.
- Swap Herbs: If cilantro isn’t your favorite, try substituting fresh parsley or mint.
- Adjust Heat: Add more or less jalapeño depending on your spice preference. You can also include some of the seeds for extra heat.
- Sweet Touch: For a hint of sweetness, add a teaspoon of honey or diced mango.
Enjoy this fresh and zesty cucumber salsa at your next gathering!
