It’s the perfect recipe to kick back and keep things simple and fresh.

Ingredients:

For the Corn Orzo Salad:

  • 1 cup orzo pasta
  • 2 cups mixed lettuce (pick your favorites)
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, pitted and sliced
  • 1 cup corn kernels (fresh, frozen, or canned)
