Sautéed Green Beans

This simple yet elegant side dish of sautéed green beans with slivered almonds is the perfect addition to any meal. The fresh, tender green beans are sautéed with garlic and finished with a light crunch from the almonds, creating a flavorful and nutritious side dish.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil (or butter)
  • 2 cloves garlic, minced
  • 1/4 cup slivered almonds
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional, for a fresh finish)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Blanch the Green Beans (optional, for extra tenderness):
    • Bring a large pot of salted water to a boil. Add the green beans and cook for about 3-4 minutes, until they are bright green and tender-crisp.
    • Drain the beans and transfer them to a bowl of ice water to stop the cooking process. Drain again and set aside.
  2. Toast the Almonds:
    • In a large skillet, heat 1 tablespoon of olive oil (or butter) over medium heat.
    • Add the slivered almonds and sauté for 2-3 minutes, stirring occasionally, until they are lightly golden and toasted. Remove the almonds from the skillet and set aside.
  3. Sauté the Green Beans:
    • In the same skillet, add the remaining tablespoon of olive oil (or butter). Add the minced garlic and sauté for about 30 seconds until fragrant.
    • Add the green beans to the skillet and cook for 3-4 minutes, stirring occasionally, until they are tender and heated through.
  4. Finish the Dish:
    • Season with salt and pepper to taste. Add the toasted almonds back to the skillet and toss everything together.
    • If desired, drizzle with lemon juice for a fresh, bright flavor.
  5. Serve:
    • Transfer the sautéed green beans to a serving dish and garnish with freshly chopped parsley if desired. Serve immediately.

Tips and Variations

  • Garlic and Herb Variations: Add fresh herbs like thyme, rosemary, or basil while sautéing the green beans for extra flavor.
  • Add a Crunch: For extra crunch, add a sprinkle of crispy fried onions or use chopped pecans instead of slivered almonds.
  • Make It Vegan: Use olive oil or plant-based butter to keep this dish vegan-friendly.

This sautéed green beans with slivered almonds is a quick and delicious side dish that pairs well with any entrée, adding a lovely texture and flavor to your meal. Enjoy!
