Instructions

  1. Prepare the Zoodles: Spiralize the zucchini using a spiralizer or julienne peeler to create long, noodle-like strands. Set the zoodles aside in a clean, wide-mouth jar or airtight container.
  2. Make the Pickling Brine: In a small saucepan, combine the apple cider vinegar, water, sugar, salt, black peppercorns, mustard seeds, minced garlic, and red pepper flakes. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar and salt dissolve (about 2-3 minutes). Remove from heat.
